Zucchini Fritters
Ingredients
- 2 large zucchini
- 1 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt (to taste)
- ½ teaspoon pepper
- 2 eggs
- ½ onion, chopped
- 2 tablespoons of oil (or more if required)
- Sour cream and chopped chives (for serving)
Method
- Grate the Zucchini – Grate 2 large zucchinis using a box grater. Place the grated zucchini in a bowl and sprinkle with 1 tablespoon of salt. Mix well and let it sit for 10 minutes.
- Prepare Dry Ingredients – In a separate bowl, combine flour, baking powder, salt, and pepper. Mix thoroughly.
- Beat the Eggs – Lightly beat 2 eggs in a small bowl.
- Remove Excess Water – Squeeze the zucchini firmly with your hands to remove as much excess water as possible.
- Combine Ingredients – Add the beaten eggs and chopped onion to the bowl with the zucchini. Mix well to combine. Gradually add the flour mixture and stir until fully incorporated.
- Cook the Fritters – Heat oil in a non-stick pan over medium heat. Drop a heaping tablespoon of the zucchini mixture into the pan and flatten it slightly with the back of the spoon.
- Fry Until Golden – Cook for 3-5 minutes on each side, or until golden brown and crispy.
- Serve – Serve immediately with a dollop of yogurt or sour cream, garnished with chopped chives. Enjoy!
