Fried Fish
Ingredients
- 4 whole mackerel
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon garlic powder
- ¼ teaspoon ginger powder
- ½ teaspoon coriander powder
- ½ teaspoon fennel powder
- 2 teaspoons turmeric
- 1-2 teaspoons chili powder
- 1 teaspoon cumin powder
- Juice of 1 ½ lemons
- Few teaspoons of semolina
- Oil for shallow frying
Method
- Prepare the Fish – Rinse the fish thoroughly inside and out under cold water. Pat dry with a towel. Use a sharp knife to make deep slits on both sides of the fish.
- Mix the Spices – In a small bowl, combine salt, pepper, garlic, ginger, coriander, fennel, turmeric, chili, and cumin powder. Stir well to blend the spices. Add lemon juice and mix to form a paste.
- Marinate the Fish – Rub the spice mixture all over the fish, ensuring it coats the outside, inside the slits, and the gutted cavity. Let the fish marinate for 10 minutes. Avoid marinating for longer.
- Coat with Semolina – Lightly sprinkle semolina over both sides of the fish to create a crisp coating.
- Heat the Oil – Add oil to a non-stick or heavy-bottom pan and heat over medium.
- Shallow Fry – Place the fish in the hot oil and shallow fry for 2-3 minutes on each side, or until the fish is fully cooked and golden brown.
- Serve – Remove from the pan and serve immediately. Enjoy with a side of fresh salad or dipping sauce!
