Spaghetti Cherry Tomatoes
Ingredients
- 400g cherry tomatoes
- 3 garlic cloves, thinly sliced
- 5 basil leaves, chopped
- 200g spaghetti
- 2 tablespoons olive oil
- ¼ teaspoon chilli flakes
- Salt to taste
- ¼ cup pasta water
- Parmesan cheese
- ¼ teaspoon sugar (if the tomatoes are too acidic)
Method
- Prepare the Ingredients – Cut the tomatoes in half and set them aside in a bowl. Thinly slice 3 garlic cloves and roughly chop the basil leaves.
- Cook the Pasta – Bring a large pot of salted water to a boil. Add spaghetti and cook according to the package instructions. You can use any type of pasta.
- Sauté the Garlic – Heat oil in a pan over medium heat. Add the sliced garlic and cook for 30 seconds, stirring to prevent burning.
- Cook the Tomatoes – Add the halved tomatoes, chilli flakes, and a pinch of salt to the pan. Cook for about 5 minutes until the tomatoes soften and release their juices.
- Add Basil – Stir in the chopped basil. If the sauce tastes too acidic, add a small amount of sugar to balance the flavors.
- Combine Pasta Water – Pour in a ladle of pasta water and mix well to create a light sauce.
- Mix the Pasta – Add the cooked spaghetti to the pan and toss thoroughly to coat in the sauce. Turn off the heat.
- Finish and Serve – Sprinkle with parmesan cheese and serve immediately.
