Spaghetti Cherry Tomatoes


Ingredients

  • 400g cherry tomatoes
  • 3 garlic cloves, thinly sliced
  • 5 basil leaves, chopped
  • 200g spaghetti
  • 2 tablespoons olive oil
  • ¼ teaspoon chilli flakes
  • Salt to taste
  • ¼ cup pasta water
  • Parmesan cheese
  • ¼ teaspoon sugar (if the tomatoes are too acidic)


 Method

  • Prepare the Ingredients – Cut the tomatoes in half and set them aside in a bowl. Thinly slice 3 garlic cloves and roughly chop the basil leaves.
  • Cook the Pasta – Bring a large pot of salted water to a boil. Add spaghetti and cook according to the package instructions. You can use any type of pasta.
  • Sauté the Garlic – Heat oil in a pan over medium heat. Add the sliced garlic and cook for 30 seconds, stirring to prevent burning.
  • Cook the Tomatoes – Add the halved tomatoes, chilli flakes, and a pinch of salt to the pan. Cook for about 5 minutes until the tomatoes soften and release their juices.
  • Add Basil – Stir in the chopped basil. If the sauce tastes too acidic, add a small amount of sugar to balance the flavors.
  • Combine Pasta Water – Pour in a ladle of pasta water and mix well to create a light sauce.
  • Mix the Pasta – Add the cooked spaghetti to the pan and toss thoroughly to coat in the sauce. Turn off the heat.
  • Finish and Serve – Sprinkle with parmesan cheese and serve immediately.
