Prawn/Shrimp Fritters
Ingredients
- ½ cup all-purpose flour (see description)
- ¼ cup corn flour (cornstarch)
- ½ - 1 teaspoon salt
- ¼ teaspoon turmeric
- ½ cup water
- 1 carrot, cut into thin matchsticks
- 1 medium onion, sliced
- 10 garlic chives, cut into 3cm pieces
- 15 medium prawns, peeled, deveined and cut into pieces
Method
- Prepare the Batter – In a bowl, combine all-purpose flour, corn flour, salt, and turmeric. Mix well to evenly distribute the dry ingredients.
- Add Water Gradually – Pour in water a few tablespoons at a time, stirring continuously to form a thick batter. If the batter feels too thin, add a bit more flour to thicken it. Keep in mind that the vegetables will release moisture, so the batter should be thicker than usual.
- Incorporate Vegetables – Add the grated carrot, chopped onion, and chives to the batter. Stir until the vegetables are evenly coated and well combined.
- Add Prawns – Toss the prawns into the mixture and fold them in until fully incorporated.
- Heat the Oil – In a pan, heat oil over medium heat until hot.
- Fry the Fritters – Scoop up a heaping tablespoon of the mixture and gently drop it into the hot oil. Flatten slightly if necessary.
- Cook Until Golden – Fry the fritters, turning occasionally, until both sides are golden brown and crisp.
- Drain Excess Oil – Transfer the fritters to a paper towel to drain any excess oil.
- Serve – Plate the fritters and serve hot with chili sauce. Enjoy!
