Prawn/Shrimp Fritters

Prawn/Shrimp Fritters

Ingredients

  • ½ cup all-purpose flour (see description)
  • ¼ cup corn flour (cornstarch)
  • ½ - 1 teaspoon salt
  • ¼ teaspoon turmeric
  • ½ cup water
  • 1 carrot, cut into thin matchsticks
  • 1 medium onion, sliced
  • 10 garlic chives, cut into 3cm pieces
  • 15 medium prawns, peeled, deveined and cut into pieces

Method

  • Prepare the Batter – In a bowl, combine all-purpose flour, corn flour, salt, and turmeric. Mix well to evenly distribute the dry ingredients.
  • Add Water Gradually – Pour in water a few tablespoons at a time, stirring continuously to form a thick batter. If the batter feels too thin, add a bit more flour to thicken it. Keep in mind that the vegetables will release moisture, so the batter should be thicker than usual.
  • Incorporate Vegetables – Add the grated carrot, chopped onion, and chives to the batter. Stir until the vegetables are evenly coated and well combined.
  • Add Prawns – Toss the prawns into the mixture and fold them in until fully incorporated.
  • Heat the Oil – In a pan, heat oil over medium heat until hot.
  • Fry the Fritters – Scoop up a heaping tablespoon of the mixture and gently drop it into the hot oil. Flatten slightly if necessary.
  • Cook Until Golden – Fry the fritters, turning occasionally, until both sides are golden brown and crisp.
  • Drain Excess Oil – Transfer the fritters to a paper towel to drain any excess oil.
  • Serve – Plate the fritters and serve hot with chili sauce. Enjoy!
