Sri Lankan Meatball Curry
For the meatballs:
- 500g minced meat (chicken, beef, pork or lamb)
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 garlic cloves, chopped
- 1 egg
- ½ cup breadcrumbs
- 1 tablespoon lemon/lime juice
For the curry:
- 3 tablespoons oil
- 4 cardamom pods
- 4 cloves
- 4cm piece cinnamon
- 1 curry leaves sprig
- 1 onion, chopped
- 3cm piece ginger, chopped
- 3 garlic cloves, chopped
- 1 tomato, chopped
- 2 teaspoons chili powder
- ½ teaspoon pepper
- ½ teaspoon turmeric
- Salt to taste
- ¼ cup water
- 2 cups coconut milk
- 2 teaspoons roasted curry powder
Method
- Prepare the Meatballs – Place all the meatball ingredients into a large bowl. Mix thoroughly until well combined.
- Shape the Meatballs – Wet your hands with cold water and roll the mixture into balls. Arrange them in a dish, cover with plastic wrap, and refrigerate.
- Heat the Oil – In a large saucepan over medium heat, add oil and warm it up.
- Flavor the Oil – Once hot, add cardamom pods, cloves, cinnamon, and curry leaves. Fry for about 1 minute until fragrant.
- Sauté the Aromatics – Add the chopped onions and cook until translucent. Stir in the chopped ginger, garlic, and tomato. Mix well and cook for 5 minutes.
- Add the Spices – Stir in chili powder, pepper, turmeric, and salt. Cook, stirring constantly, until the mixture thickens and loses its raw flavor.
- Simmer the Sauce – Pour in water and let it cook for 2-3 minutes until the sauce begins to boil and thicken.
- Incorporate Coconut Milk – Add the coconut milk and mix well. Adjust salt to taste. Allow the sauce to simmer gently.
- Enhance with Curry Powder – Stir in roasted curry powder and simmer for another minute or two.
- Cook the Meatballs – Place the meatballs into the sauce, cover, and simmer on low heat for 5 minutes.
- Coat and Cook – Gently turn the meatballs to ensure they are well coated in the curry. Cover and continue to cook for 15 minutes, or until the meatballs are fully cooked through.
- Garnish and Serve – Sprinkle with chopped coriander/cilantro and serve hot with rice.
