Mango Curry


Ingredients

  • 500g green mango
  • 1 teaspoon chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon salt (to taste)
  • 2 teaspoons roasted curry powder
  • 1-2 tablespoons sugar
  • 2 tablespoons oil
  • 3cm piece cinnamon
  • 3 cardamom pods
  • 3 cloves
  • 1 onion, sliced
  • 3 garlic cloves, chopped
  • 1 curry leaves sprig
  • 1 cup of water (250ml)


Method

  • Prepare the Mangoes – Wash the mangoes thoroughly. Slice off the top stem and cut the cheeks away from the seed. Trim the remaining flesh from the sides of the seed. Cut each mango cheek into three strips.
  • Marinate the Mango – Place the mango pieces in a bowl. Add chilli powder, turmeric, salt, roasted curry powder, and sugar. Mix well to coat the mango evenly. Let it marinate for a few minutes.
  • Sauté the Aromatics – Heat oil in a saucepan over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Fry for about a minute until fragrant.
  • Cook the Onions – Add the sliced onion and sauté until softened.
  • Add Garlic and Curry Leaves – Stir in the chopped garlic and curry leaves, cooking for another minute.
  • Cook the Mango – Add the marinated mango to the pan and mix well. Cook for 2 minutes, allowing the flavors to blend.
  • Simmer – Pour in some water, cover the pan, and simmer until the mango is tender. Adjust salt and sugar to taste if needed.
  • Serve – Serve warm with rice.
