Lemon Rice
Ingredients
- 1 tablespoon oil
- ½ teaspoon mustard seeds
- ½ tablespoon chana dal
- ½ tablespoon urad dal
- 1 tablespoon peanuts
- 1 curry leaves sprig
- 3 dried red chillies
- 3 garlic cloves, chopped
- ½ teaspoon turmeric
- Salt to taste
- 2 cups cooked rice (Rice is at room temperature)
- 1 tablespoon lemon juice, as needed
Method
- Heat a pan over low heat. Add oil.
- Add mustard seeds, chana dal, urad dal and peanuts. Fry until golden. Keep stirring while adding ingredients to prevent them from burning. By this time mustard seeds will start popping and fragrant the oil.
- Add curry leaves and fry for about 10 seconds.
- Add dried red chilies and fry for about 10 seconds.
- Add chopped garlic and fry for 30 seconds.
- Add turmeric and salt and give it a good mix. Turn off the heat.
- Add the rice and mix well.
- Add lemon juice and mix well.
